OK, this sounds like there is a problem with your data, not with ArcMap or with the symbology.
When you try to preview the data in ArcCatalog or load it into ArcMap, do you get an error message? What does it say?
If you look at the catalog tree, does your data still show up as a line shapefile (assuming it is a shapefile), or did that change, perhaps to a table? This might pinpoint to one of the three essential files making up a shapefile having gone missing or been renamed. (This happens when you copy or move files in Windows instead of using ArcCatalog.) If that's the case, check with the Windows Explorer that you have a .dbf, a .shp and a .shx with the exact same name in front of the dot in the same folder (plus up to four others which are non-essential).
Did you do any editing on the data, maybe also outside of ArcGIS (like opening the .dbf with Excel)? That can screw things up. Do you have a backup copy of your data, even if it's before edits?
